Limoncello Gin Cocktail

Description

A refreshingly citrusy gin cocktail for enjoying the last dregs of summer.


Ingredients

For the thyme simple syrup

  • 6 sprigs fresh thyme
  • 1 cup sugar
  • 2/3 cup water

For one cocktail

  • 1 ounce gin
  • 1/2 ounce limoncello
  • 1/2 ounce lemon juice
  • 3/4 thyme simple syrup
  • 1 ounce club soda
  • ice
  • additional thyme and lemon slices for garnish (optional)

Instructions

For the thyme simple syrup

  1. In a medium saucepan, combine water, sugar and thyme and bring to a boil over medium-high heat. Once the mixture boils, stir gently until all the sugar is dissolved. Remove from heat and let stand for 20 minutes.
  2. Allow to cool to room temperature then store in a tightly sealed container in the refrigerator for up to 4 weeks.

For the cocktail

  1. In a cocktail shaker, combine gin, limoncello, lemon juice and thyme simple syrup. Shake to combine. Strain into a highball glass filled with ice and top with club soda. Garnish with additional thyme sprigs and a slice of lemon, if desired.
